Industrious!

That is what I have been lately. Because summer is almost over that means the vegetables planted this spring are spent. Time to get the garden ready for fall crops. My time has mostly been spent pulling up old plants and getting the beds ready for new seeds. Last Saturday I spent the morning out in the garden. Monday I spent 3 hours out there since I didn't have to watch my grandson. I got a lot of seeds planted.
Monday I was busy from 6:30 am until 8:30 pm.

I like to plant beans that I can dry to have for the winter. This year was so disappointing. The vines were growing great but while I was on vacation we got a lot of rain. So much rain caused the pods to get moldy and many of the beans started sprouting right in the pods. These two jars was all that I could salvage. I spent a couple hours checking each dried pod to get these beans.

This is the summer for butternut squash. Last year it was green bell peppers. I only planted one plant of butternut squash which is still producing. Most of these other squash came from volunteer plants. I guess I will be looking for new recipes to try out using these squash. If you have any links for good butternut squash recipes I would love for you to share them with me.
Sunday I took some time to sew. I decided to pull out these log cabin blocks that I started the beginning of the year. Nice to just sit and chain piece.
I picked two more little pumpkins. Still not big enough to get any pulp to cook but there is another one growing that might just deliver.
I love growing basil in the garden too. I like to make lots of pesto. I freeze it in ice cube trays which I can then pull out a few cubes for recipes.
Time well spent but I am ready for Autumn so things slow down a bit.

With Passion,
Carrie P.

Hi,
In Australia we call Butternut Squash a pumpkin. We bake it with our roast meat. I leave the skin on mine as it helps to keep it from falling apart as it cooks. We also boil it up with potato, drain off all the water and then mash them together with milk and butter. Pumpkin soup is another common use and the best recipes tend to have one or two medium potatoes added to thicken up the soup. In Queensland, pumpkin scones were made popular by the wife of one of the longest serving Premier's, Sir Joe Bjelke-Peterson. Lately, I've noticed that some of our mixed green salads now contain small pieces of cold cooked pumpkin. What a beautiful crop, I'm very envious!!!
Happy cooking.

Roasted butternut is my favorite side with roast meat, but I also like to roast the whole pumpkin (peel and cut in pieces) with 2 large sweet potato ( peeled)and some garlic cloves. Once roasted I add into a large saucepan with some chicken stock and puree with my bamix and it makes a great soup. Because they keep so well, I just leave them in a cool dry place and use them for soup all winter.

Ohhhh, when I see all those butternut squash, I miss our garden in the country. Enjoy! 'Taste of Homes' has so many great recipes, but one quick one we loved best was - cut squash in half - clean and place a bit of butter, brown sugar in scooped out cavity - sprinkle with salt and pepper and bake at 350 for 1 hour. Always delicious!!

I had the rain problem with tomatoes. Rain, split, bugs, and I could not get them picked fast enough to keep them from rotting on the vine. Butternut squash I just kind of steam in the oven, scoop out the pulp and freeze to use over the winter.

Putting around the garden is so rewarding, isn't it? Your squash look delicious and the pesto looks wonderful too. I love pesto on my pizza, it adds such a fresh zing to it! Enjoy sewing your log cabin blocks, log cabins can be so much fun to make.

I need to try some Fall crops. Anything not behind the fence was Deer food this year, but we have two small fawns we have gotten to see grow because of the garden buffet!

Isn't it funny how each year something different appreciates the conditions and produces excess? I don't keep a vegetable garden anymore, but for me this is the year of the blueberry. Good luck with your fall plantings!

Yes! You have been busy! Gardens take so much work and time, but I am sure it is worth it. I am sorry to hear about your beans this year. At least they are not an expensive item to purchase. Love your Log a Cabin blocks. Your pesto looks wonderful.

I'm hanging onto summer with both hands and my teeth. I do NOT want it to end, lol. It'll end faster up here, though....and they're predicting another very hard winter.

Glad you got some productive time in the garden hon, your grandson is too adorable for words. I've never done a log cabin, I suppose I should since I love them - but I have a very hard time sitting and piecing!!!
