What do you do when you harvest over fifty pounds of sweet potatoes from the garden? You learn new recipes. Today Mr. P. and I went to our late church service and afterwards I made brunch. I had cooked some sweet potatoes last night. I mashed them so they would be ready to put in Sweet Potatoes biscuits. I don't claim to be an expert at making making biscuits. These did not rise as much as I had hoped but they were still very good. Mr. P. loves them. I made plain biscuits many, many years ago and they were like a rock so I have always stayed away from trying to make them.
I also found a recipe for North Carolina Sweet Potato Frittata. This turned out to be pretty good too. Interesting combination for sure.
So after brunch I finished putting mulch on the garlic I planted yesterday and then took some time to do some
Slow Stitching. I worked on this pattern from the
Aurifil BOM. This one was designed by Amanda Woodward-Jennings. I am linking up to

I spent the time on the patio and this is the view I have. I watch the birds as much as I stitch. I have been taking advantage of days like these spending them outdoors. Our weather has been perfect.
I thought I would show you this late bloomer from the garden. Perfection!

Peaceful spot to stitch! I love watching birds too. Saw a group of geese flying north yesterday...then wondered, shouldn't they be flying south? Maybe they missed their offramp and had to back track :-)

Yummmm....I love sweet potatoes! I think the biscuits look scrumptious! =)
My husband's favorite way to eat sweet potatoes is to peel and cut them up, add about 1/3 cup olive oil and one package of lipton onion soup mix. Bake at 350 for about 30-40 minutes. Everyone that has tried that likes it. He is so glad it sweet potato time again.

What you call biscuits we call scones and i am quilte reknown for them! Try cutting them with a smooth round cutter (I've heard the wavy edges inhibit rising) and put them butting up against each other on the tray -- that way they've got nowhere to go but up!
I'm not a fan of sweet potatoes. But with your recipe I might learn to like it. I'm curious of how it'll taste.
Sweet potatoes are a specialty here. Looks very good what you made with them.

We just had some NC sweet potatoes from the farmers market last night, yum. I love sweet potato biscuits, especially with peach jam, yum!

I love to sit outside and do anything or nothing. Unfortunately my current neighbors have yapping dogs that don't realize that I'm allowed to sit on my patio in peace :-(
